Thai Peanut Chicken

Great weekday meal with Thai inspired flavors, but simple ingredients.

Ingredients
  

  • 1 tsp Garlic Minced or grated. About 1 thumb sized clove
  • 1 tsp Ginger about 1/2" to 1" ginger root depending on thickness
  • 1/2 cup Peanut butter Smooth. We'll add roasted peanuts at the finish for texture.
  • 2 tbsp Lime 1/2 of a lime.
  • 1.5 tbsp Soy sauce I prefer light. Suggest using just 1T if using regular soy.
  • 1 tbsp Honey Brown sugar is a fine alternative
  • 1 tsp Sesame Oil
  • 1/2 tsbn Sambal Or Sirachi or other heat source.
  • 1 lbs Chicken I think 1/4 lbs each works for my family, but there will be plenty of sauce for doubling chicken amount if you have a hungry crew.
  • 1/4 cup Roasted Peanuts
  • 1/4 cup Cilantro Loose leaves. It will be much smaller when chopped.

Instructions
 

  • Mix garlic thru sambal into to a sauce pan and warm over medium low until incorporated and you can smell the ginger and garlic releasing their lovely aroma. Add 1-3 T water if too thick. When you have your desired consistency, allow to cool.
  • Cut the chicken into bite sized pieces. Reserve about 1/3 of the sauce. Pour the reamining sauce over the chicken in either a bowl or plastic bag. Marinade for 30 minutes if eating same night, but 4hrs to overnight would add even more flavor!
  • Preheat oven to 375. Prepare a baking dish either greasing lightly or using aluminum foil depending on how much you like to do dishes.
  • When chicken marinated to appropriate level and oven warm, arrange chicken in a single layer. Set timer for 30 minutes.
