Thai Peanut Chicken
So simple, but so tasty. A very comforting dish for a week. This is definitely an Americanized version, but the ginger, garlic, sambal, et al remind you of regional dishes while still appealing to all taste buds in the home.
Thai Peanut Chicken
Great weekday meal with Thai inspired flavors, but simple ingredients.
Ingredients
- 1 tsp Garlic Minced or grated. About 1 thumb sized clove
- 1 tsp Ginger about 1/2" to 1" ginger root depending on thickness
- 1/2 cup Peanut butter Smooth. We'll add roasted peanuts at the finish for texture.
- 2 tbsp Lime 1/2 of a lime.
- 1.5 tbsp Soy sauce I prefer light. Suggest using just 1T if using regular soy.
- 1 tbsp Honey Brown sugar is a fine alternative
- 1 tsp Sesame Oil
- 1/2 tsbn Sambal Or Sirachi or other heat source.
- 1 lbs Chicken I think 1/4 lbs each works for my family, but there will be plenty of sauce for doubling chicken amount if you have a hungry crew.
- 1/4 cup Roasted Peanuts
- 1/4 cup Cilantro Loose leaves. It will be much smaller when chopped.
Instructions
- Mix garlic thru sambal into to a sauce pan and warm over medium low until incorporated and you can smell the ginger and garlic releasing their lovely aroma. Add 1-3 T water if too thick. When you have your desired consistency, allow to cool.
- Cut the chicken into bite sized pieces. Reserve about 1/3 of the sauce. Pour the reamining sauce over the chicken in either a bowl or plastic bag. Marinade for 30 minutes if eating same night, but 4hrs to overnight would add even more flavor!
- Preheat oven to 375. Prepare a baking dish either greasing lightly or using aluminum foil depending on how much you like to do dishes.
- When chicken marinated to appropriate level and oven warm, arrange chicken in a single layer. Set timer for 30 minutes.
