Or is it Catsup from Scratch, I don’t know. While I do love my Heinz Ketchup, the version without high fructose corn syrup is often relatively expensive, and besides its just kind of crafty to make your own version of something you love.

This is mostly a copycat of a copycat recipe. I love Todd Wilbur’s Top Secret Recipes website. It is a wealth of ideas on how to make your own version of well known products, from Jolly Rancher candies to P.F Chang’s Dan Dan Noodles. I have not yet tried their products, but aim to do so in the foreseeable future.

For this copycat, I liked just a touch more salt, and added a small amount of citric acid for a little extra acidity. Otherwise, it is pretty much the same as his Heinz Ketchup recipe. Enjoy.

Ingredients
  

  • 6 oz tomato paste
  • 1/2 cup distilled white vinegar
  • 1/2 cup light corn syrup NOT high fructose corn syrup
  • 1/4 cup water
  • 1.5 tsp salt
  • 1/4 tsp onion powder
  • 1/8 tsp garlic powder
  • 1/8 tsp citric acid optional

Instructions
 

  • Whisk together all of the ingredients in a medium pot. Set over medium heat and bring to a boil. Reminder that it is already a reasonably thick sauce and when it starts to boil it may splatter a bit, both messy and mildly painful if it lands on your hand.
  • Turn down to low and simmer, partially covered (for splatter), for about 30 minutes, or until it gets to close to the consistency you like.
  • If you will be storing in a glass or ceramic jar, transfer while still warm and then chill the storage container in an ice bath (lid off, so be careful not to spash water into the jar). If you will be storing in a plastic container, allow to cool to room temperature before transfering.
  • Chill for about 2 hours, and then enjoy.
